These simple spinach balls are easy to make and is often served at family gatherings. Mary Ann says there is only one problem with this recipe – there is never enough!

Mary Ann was a tutor for both reading and English as a Second Language students for nine years before she joined Literacy Pittsburgh’s staff. This recipe was given to her by a close Greek friend!

  • 2 (10-ounce) packages frozen, chopped spinach (drained well)
  • 2 cups Pepperidge Farm Herb Stuffing
  • 11⁄2 sticks butter or margarine, melted
  • 1⁄2 cup Parmesan cheese, grated
  • 1 teaspoon garlic salt
  • 1 teaspoon pepper
  • 1 onion, minced
  • 4 eggs, beaten


These Greek style spinach balls are traditionally called Spanakokeftedes!

Step 1
Combine stuffing mix with butter or margarine in a large bowl. Add remaining ingredients.
Step 2
Cover bowl and refrigerate for 2 hours.
    Step 3
    Form into balls (can be frozen at this point for baking later).
      Step 4
      Bake at 350 degrees F for 20-30 minutes (longer, if frozen).
