This Bulgarian cold Cucumber Soup is a traditional dish eaten across Bulgaria, with multiple variations of it throughout Europe and Central Asia.

Ingredients
  • 1 cucumber, diced
  • 1 pound plain yogurt 
  • 2-3 garlic cloves, smashed 
  • Salt, to taste 
  • Pinch dill flakes 
  • 1 cup water 
  • 2 teaspoons vegetable oil (olive oil is best) 
  • 2-3 tablespoons walnuts, chopped

Instructions

Step 1
Place cucumber, yogurt, garlic, salt and dill in a bowl. Mix well by hand. 
Step 2
Add water gradually and mix slightly. 
    Step 3
    Pour soup into serving bowls. Add oil and walnuts.
      Serving
      Decorate with a branch of fresh dill.
