Coxinha is a popular snack throughout all regions of Brazil, and is often eaten at children’s parties. Using shredded chicken that is battered with dough and then fried into a small teardrop shape, these are perfect for snacks and appetizers!

Originally from Brazil, Lucimer is a member of the International Women’s Association of Pittsburgh (IWAP) and is part of their cooking class. Ingredients

 Dough

  • 2 liters of water
  • 1 kg of sifted wheat flour
  • 3 cubes chicken stock
  • 1 spoon margarine or butter
  • 1 spoon salt
  • 1 spoon paprika

Stuffing

  • 1 kg chicken breast
  • small bunch of parsley and green onion
  • paprika
  • salt to taste

To Bread

  • iced milk
  • breadcrumbs
Coxinha, pronounced co-shee-nya, is a popular Brazilian street food! It can also be made with maize or cheese.

Instructions

Step 1
Cook the chicken with the salt, paprika and green herbs in around 2 liters of water until the chicken is soft, approximately 40 minutes. Remove the chicken and save the water.
Step 2
Shred the chicken, mixing it with the small fresh herbs.
Step 3
In a liter of boiling water, add the chicken broth and butter, mixing to melt. Start adding the flour little by little, mixing well until the dough is cooked and homogeneous.
Step 4
Place the dough on a bench greased with a little oil, and knead the dough well. After, start modeling the coxinhas into little drumstick shapes, filling the dough with shredded chicken.
Step 5

Bread the coxinhas in the iced milk and then in the breadcrumbs. Deep fry them in hot oil, enough to cover the coxinhas. 

Serving
Let cool and serve warm!
